Peanut Butter Cookies (Dairy Free & Gluten Free)

Ingredients

Peanut Butter: 250g (1 cup)
Brown Sugar: 150g (1/2 cup)
Egg
: 1
Vanilla
: 1 tsp
Baking Soda
: 1/2 tsp
Diary Free Chocolate Chips
: As many as you like
Salt: Just a little fine salt

Instructions

  1. Mix Egg, Vanilla, Baking Soda in bowl.
  2. Mix Brown Sugar into the bowl.
  3. Mix Peanut Butter in until smooth.
  4. Mix in as many chocolate chips as you'd like.
  5. Spray avocado oil or similar onto pan. Use either a 9" glass pie pan or you can use a muffin tin.
  6. Bake at 350 for 13-20 minutes. Baking Pro-tip: Always underbake and add a few minutes at a time.
  7. Wait for crust to start lightly browning.
  8. Sprinkle salt lighting on top.
  9. Let set for 30 minutes to solidify.
  10. Cut into serving pieces.
  11. Refrigerate leftovers.
